Onion Jam Recipe
After many requests from our clients, we are sharing our onion jam recipe. We love serving these with our focaccia crisps, homemade ricotta or local cheese. So next time you’re hosting a gathering consider adding this to your charcuterie board.
Ingredients:
- 2 tablespoons olive oil
- 3 large onions cut in ¼ inch pieces
- 1.5 tablespoons finely chopped fresh rosemary
- 1 cup sugar
- 3/4 cup apple cider vinegar
- Salt to taste


Instructions:
- In a large pot, heat the 2 tablespoons of olive oil and add the 3 large onions, cooking them at medium high heat, mixing occasionally until they are caramelized, about 15 minutes. Before they are fully browned add the finely chopped rosemary.
- Sprinkle the sugar over the onions and cook without mixing until the sugar has melted, about 5 minutes.
- Turn the heat up and cook, stirring occasionally until the onions and sugar become a dark amber caramel, about 6 minutes.
- Add the vinegar and let the mixture bubble at a low heat, mixing occasionally until it is a loose jam consistency (it will firm up once cool). Season with salt and allow to cool before refrigerating.
